WE DON'T ROAST UNTIL YOU ORDER
The ideal window for enjoying peak flavor is within 1-2 weeks of roasting. After 2 weeks, flavors start to become dull. Store-bought coffee is roasted and on the shelves a few weeks to three months before we use it. We've become accustomed to the dull flavor of coffee, thinking, "This is how it's supposed to taste."
